Ingredients:
1 tablespoon olive oil |
2 tablespoons lime juice |
1 teaspoon bottled minced garlic |
1 cup fresh corn |
1 cup halved cherry tomatoes |
1 teaspoon fresh cilantro |
Directions:
- In a small bowl, whisk together olive oil, lime juice, hot sauce, garlic and salt; set aside. In a dry skillet, toast corn for about 2 minutes, stirring frequently until golden. Place corn in a medium size bowl. Add pepper, onion, tomatoes and cilantro; toss to combine. Add in olive oil-lime mixture; stir to combine. Let stand for five minutes before serving.
