Corn and Black Bean Nachos

Serves 4 | 

Easy, cheesy and delicious!


1/2 cup refried beans
1 Roma tomato, (diced)
1/4 cup green chilies
5 cups tortilla chips
1/2 cup black beans
1/3 cup corn kernels
1 1/2 cups Monterey Jack cheese
1 avocado, (halved seeded, peeled and diced)
Cooking spray


  1. Preheat oven to 375° F.
  2. Grease a medium baking dish with cooking spray.
  3. Layer half of the tortilla chips in baking dish. Top with half of the refried beans, Monterey Jack cheese, green chilies, diced tomato, corn kernels and avocado. Repeat with remaining chips and toppings.
  4. Place baking dish in the oven and bake for 10 minutes.
  5. Remove from oven and top with jalapenos.
