Grilled Zucchini and Yellow Squash with Apple Cider Glaze

Ingredients:
4 zucchini, trimmed and sliced lengthwise into 4 slices each
4 yellow squash, trimmed and sliced lengthwise into 4 slices each
1/4 cup olive oil
Salt and pepper to season
Brush zucchini and yellow squash slices with about 1/4 cup olive oil and season with salt and pepper. Using a pair of grilling tongs, grill zucchini and yellow squash, approx. 3 minutes on each side until grill marks form. Place on a platter
Cider Glaze
2 tablespoons butter
2/3 cup apple cider
3 tablespoons brown sugar
Salt and pepper to season
2 tablespoons fresh parsley, chopped
In a saucepan over medium heat, melt butter. Add apple cider, brown sugar, salt and pepper. Turn heat down to low and continue cooking until liquid is reduced by half. Pour apple cider glaze over grilled zucchini and yellow squash. Sprinkle with Parsley and serve.
