Lemon Dill Coho Salmon

Serves 4
Ingredients:
4 (4 to 6 ounce) Coho salmon fillets |
1 tablespoon fresh lemon juice |
1/4 teaspoon dill weed |
2 tablespoons butter, melted |
1/8 teaspoon salt |
1/8 teaspoon pepper |
Dill weed leaf, for garnish |
Directions:
- Preheat broiler. Grease a broiler rack then place salmon fillets on rack.
- In a small bowl, stir together lemon juice, dill weed, butter, salt and pepper. Baste salmon fillets then place under broiler, 4 inches from heat source.
- Broil for about 10 minutes per inch of thickness (do not turn fillets, and baste frequently). Salmon is done when fillets flake with a fork. Garnish with dill weed leaf.
