In a processer blend panko bread crumbs and corn starch. Beat eggs until slightly foamy. Dip abalone steaks in egg then panko mixture to evenly coat both sides. Place the steaks on a tray and allow to rest at room temperature for at least 10 min. This helps to promote even cooking and a crispy texture.
Pour clarified butter into pre-heated skillet to cover the bottom. Cook abalone med/high heat until browned; about 60-90 seconds each side. Remove abalone from skillet and place on warming tray top steaks with sauce and chopped parsley.

California Abalone
Serves 8
Ingredients:
8 abalone steaks, sliced
1 cup panko bread crumbs
1 cup corn starch
2 whole eggs
1/2 cup clarified butter
2 tablespoons parsley, finely chopped
Caper Butter Sauce
1 tablespoon butter
1 teaspoon capers
1 teaspoon fresh lemon juice
A dash of white wine
