Bacon-Wrapped Stuffed Jalapenos

Serves 15


Ingredients:

20 jalapeños, whole, fresh
2 8-oz blocks of cream cheese, softened at room temperature
2 pounds bacon

Directions:

  1. Preheat oven to 375 degrees F. Place a wire rack on a baking sheet and set aside.
  2. Cut the jalapeños in half, lengthwise. Remove the seeds and membranes and fill each jalapeño half with cream cheese. Wrap each jalapeño half with a slice of bacon. Secure bacon with a toothpick.
  3. Place wrapped jalapenos on the wire rack and bake for 20 to 25 minutes. Check after 20 minutes and if the bacon doesn’t look brown enough, turn on the broiler for a couple of minutes to finish. Be sure to check often so they don’t burn. Remove from oven and serve on a large platter.
