Balsamic Asparagus Salad

Serves 8 | 

A tasty fresh salad that’s crisp and tangy!

Ingredients:

1 lb asparagus, ends trimmed
1/4 medium red onion, chopped
1 tablespoon extra virgin olive oil
4 teaspoons balsamic vinegar
1 clove garlic, minced
1/4 teaspoon sea salt
1/4 teaspoon black pepper

Directions:

  1. Bring a medium pot of water to a boil then add asparagus. Boil for 3 minutes and remove from heat. Drain asparagus and rinse with cold water immediately. Once cooled, dry asparagus thoroughly.
  2. Mix extra virgin olive oil, balsamic vinegar, garlic, salt and pepper in a small bowl. Toss asparagus and red onions with balsamic mixture. Serve chilled or at room temperature. Enjoy!
