Smoky and Sweet Barbecue Pork Quesadilla

Serves 2 | 

A perfect single serving quesadilla that really hits the spot.


1 tablespoon agave nectar
Cheddar cheese
1/2 lb pulled pork, (cooked)
1 apple wedge, (quarter an apple)
2 tablespoons barbecue sauce
2 tortillas


  1. Heat up pork in a greased saucepan on medium heat. Add barbecue sauce, agave nectar and apple to pan. Cook for 5 minutes.
  2. Add butter to a second saucepan, coat evenly. Turn to medium heat, add 1 tortilla, cook until lightly browned, flip and repeat, set aside. Cook second tortilla in same pan, until lightly browned on both sides.
  3. Add filling to tortilla, sprinkle cheese on top, cover with second tortilla and cook until cheese has melted. Flip and cook additional 2-4 minutes.
  4. Remove from pan, cut in half and enjoy!
