Healthier Southern Fried Chicken

Ingredients:
2 teaspoons salt, (more for taste)
1 teaspoon poultry seasoning
6 cups vegetable oil
1/4 cup heavy cream
1 teaspoon ground black pepper, (more for taste)
3 eggs
3 lb chicken drumsticks
2 1/3 cups soy flour
1 teaspoon garlic powder
Directions:
Preheat oven to 350° F.
Heat a deep pot to medium-high and fill to at least and inch deep. Use thermometer to check that the oil is 350° F.
As pot is heating up, combine cream and eggs in a mixing bowl to make egg wash.
In a second bowl, combine salt, soy flour, poultry seasoning, pepper and garlic powder to make breading.
Season both sides of chicken breasts with salt and pepper, dip into breading first, then into egg wash, then back into breading. Make sure that both sides of chicken are well coated. Shake excess breading back into bowl. Repeat with remaining chicken.
Slowly dip chicken into pot, fry both sides until golden brown, should only take a few minutes. Place cooked chicken on paper towels to drain excess oil. Repeat with remaining chicken.
Arrange cooked chicken on a baking sheet, place in oven. Cook 10-12 minutes. (Soy flour will brown before chicken is thoroughly cooked)
