Ingredients:
2 cups cheddar cheese, (shredded)
1 oz taco seasoning
1 lb ground beef
1 1/2 tablespoons chili oil
36 tortilla chips, (crushed)
16 oz refried beans
36 wonton wrappers
Cooking spray
Toppings
Onion, (diced)
Sour cream, (optional)
Cilantro, (optional, diced)
Tomatoes, (optional, diced)
Directions:
Preheat oven to 375° F.
Pour chili oil into a large skillet, turn heat to medium-high. Once hot, add taco seasoning and ground beef. Stir ingredients together.
Coat an 18-count muffin tin with cooking spray. Place wonton into each muffin cup, fill each with 1 tablespoon of refried beans, top with small amount of crushed tortilla chips. Spoon 1 tablespoon taco meat into muffin cup, top with cheese. Repeat process with remaining muffin cups. Then add second layer of wontons, chips, beans, meat and cheese on top of each.
Place muffin tin into oven, bake 15-20 minutes. Remove tin from oven, let cool for 15 minutes. Remove taco cupcakes from tin, sprinkle choice toppings on and enjoy!
