Marinade:
1 tbsp grated lemon rind
1/4 cup lemon juice
1/4 cup rice wine (sake)
2 tbsp soy sauce (or tamari)
4 cloves garlic, minced
1 tbsp fresh ginger, minced
2 tbsp cilantro, minced
2 tbsp peanut oil
  1. Combine marinade ingredients in a bowl, place the swordfish in the mixture and marinate for 1 hour.
  2. Char-broil the swordfish steak on a hot barbecue or under the broiler in the oven. Cook until golden brown on each side (approx 5 minutes on each side); basting with the marinade. Serve at once with 1 tbsp of marinade on each steak. Garnish with sprigs of cilantro.
