Tender Beef Brisket Burrito

A yummy way to begin your morning.


6 cup breakfast potatoes, seasoned to taste
6 eggs, beaten
6 lbs beef brisket
12 tablespoons cheese, shredded
12 flour tortillas
12 tablespoons salsa
Salt, to taste
Pepper, to taste
4 cups apple cider
2 cups olive oil


  1. For the brisket:
  2. Preheat grill to medium, indirect heat for cooking.
  3. Salt and pepper beef brisket in equal parts. Place brisket in aluminum baking tray, pour in apple cider, covering brisket halfway up. Cover with aluminum foil, place away from flame and grill for 2 1/2 hours.
  4. For taco fillings:
  5. Pour olive oil in sauce pan, heat to medium, add potatoes. Cook 7-12 minutes, potatoes should be lightly browned. Season with salt and pepper.
  6. Once potatoes are browned, pour in eggs. Stir together and cook 5-7 minutes. Flip when done and cook additional 5 minutes, until eggs fully cooked.
  7. If brisket is cooled, heat in separate pan on medium heat.
  8. Pour egg/potato on top of tortilla, slice brisket and place on top of egg mixture and sprinkle cheese on top. Roll up and enjoy!
