Tangy Grilled Chicken

How can a chicken be this tasty and so easy to make? The answer lies in the ingredients, which give this dish a variety of flavors and textures.


3/8 teaspoon pepper
4 cheese slices, (provolone suggested)
1 garlic clove, (minced)
4 chicken breasts, (skinless, boneless)
1 red bell pepper
2/3 cup barbecue sauce
3/4 teaspoon kosher salt
1 sweet onion, (halved crosswise)


  1. Preheat grill to medium-high.
  2. Place chicken on one side of grill, sprinkle with pepper and salt. Baste with barbecue sauce and grill for 5-6 minutes, each side with the lid closed. In last minute, place cheese on top.
  3. Grill onion and bell pepper on other side of grill for 5 minutes, lid closed, turning to ensure only light charring. Remove from grill and slice bell pepper in half, remove seeds and core. Cut bell pepper to preferred size, dice onion.
  4. Toss together remaining barbecue sauce, pepper, salt with garlic, onion and bell pepper.
  5. Serve vegetable mix with chicken and enjoy!
