Skillet-Cooked Top Round Steak

Top round steak makes for a quick and flavorful meal, any night of the week.

Ingredients:
2 pounds top round steak, 1-inch-thick or less
Dry mustard
Salt
Black pepper
Butter, softened
Directions:
Two hours before cooking, allow steak to come to room temperature. Trim steak of any connective tissue on surface of the steak. If necessary, and using a meat mallet, pound steak to an even thickness.
Heat a large cast iron skillet over medium-high heat.
Rub dry mustard onto each side of steak. Sprinkle steak with salt and freshly ground black pepper. Spread softened butter onto each side of steak. Place steak in skillet; cook 3 minutes per side.
Remove skillet from heat, tent skillet with foil, and allow steak to sit for several minutes in skillet. Test for desired degree of doneness by using a small knife to check the color of the steak.
