Pork Tenderloin with Sauteed Apples

Serves 4

Tender pork with sauteed apples, entirely delicious!

Ingredients:

1/8 teaspoon cinnamon, ground
1/4 teaspoon coriander, ground
1/8 teaspoon nutmeg, ground
3/8 teaspoon salt
1/4 teaspoon ground black pepper, freshly ground
1 pound pork tenderloin, trimmed and cut crosswise into 12 pieces
Cooking spray
2 tablespoons butter
1/3 cup shallots, thinly sliced
2 cups thinly sliced Gala apple, unpeeled
1/8 teaspoon salt
1/4 cup apple cider
1 teaspoon thyme leaves, fresh

Directions:

  1. Heat a large cast-iron skillet over medium-high heat.
  2. In a small bowl, combine the cinnamon, coriander, nutmeg, salt and black pepper; evenly sprinkle seasoning mixture over pork.
  3. Coat the skillet with cooking spray, and add pork to skillet. Cook pork for 3 minutes per side or until desired degree of doneness. Remove pork from skillet and keep warm.
  4. Melt butter in skillet, making sure that it coats the bottom of the skillet.
  5. Add shallots, apple slices and salt to skillet; sauté ingredients until apple slices start to brown, about 4 minutes.
  6. Add apple cider to pan; cook until apple is crisp-tender, about 2 minutes.
  7. Stir in thyme leaves, and serve with pork.
