Prosciutto Wrapped Mascarpone Stuffed Apricots
Serves 24
Ingredients:
7 oz. Mediterranean apricots, dried and pitted
12 slices prosciutto, thin slices
3/4 cup Mascarpone cheese
2 tablespoons powdered sugar
1/8 teaspoon white pepper
Directions:
Preheat oven to 425 degrees F.
Cut a slit in each apricot, and set aside.
Cut each slice of prosciutto in half lengthwise, and set aside.
Combine the Mascarpone cheese, powdered sugar, and pepper in a small bowl.
Stuff the apricots with the cheese mixture.
Wrap a piece of prosciutto around each apricot; secure with a toothpick. Set on an ungreased 15x10x1 inch baking pan.
Bake, uncovered, until heated through, about 15-20 minutes.
