Asian Chopped Salad

Serves 2 | 

Fully enjoy this healthy, light and flavorful salad.

Ingredients:

2 chicken breasts, (cooked anddiced)
1 red bell pepper, (cored and chopped)
1 snow pea, (sliced)
1 carrot, (shredded)
1/2 cup almonds, (coarsely chopped)
1/2 cup green onions, (sliced)
18 water chestnuts, (drained and chopped)
1 ginger, (fresh, grated)
Salt, (to taste)
Ground black pepper, (to taste)

Directions:

  1. Combine the first seven ingredients in a medium bowl and toss well to combine.
  2. Whisk together the vinegar and sugar in a separate bowl until the sugar dissolves.
  3. Add the oil, ginger and salt and pepper to taste and combine. Pour over the salad and toss.
