Ingredients:
1 lb ground chicken
3/4 teaspoon kosher salt
2 tablespoons taco seasoning
1 jalapeno, minced
2 teaspoon olive oil
1 cup shredded pepper jack cheese
1 avocado, halved and pitted
1 tablespoon lime juice
1/2 cup prepared salsa, your preference
1 cup crushed tortilla chips
4 hamburger buns
Directions:
Add the ground chicken to a mixing bowl. Season with salt, taco seasoning and half of the minced jalapeno. Mixing together and then form into four patties.
Bring a large skillet to a medium heat. Drizzle the olive oil into the skillet. Once the oil is hot, add the chicken patties. Cook for 3-4 minutes, until golden brown. Flip and cook another 2 minutes. Top each patty with an even amount of the pepper jack cheese. Add 1 tablespoon of water and place a lid on the skillet. Cook for 2 minutes, until the cheese is melted.
Place the avocado, lime juice and the remaining minced jalapeno into a small bowl. Mash and mix until combined.
Remove the chicken patties from the skillet and place on the bottom hamburger buns. Top each patty with an even amount of the avocado mixture. Then spoon the salsa on top of the avocado and sprinkle the crushed tortilla chips over the salsa. Place the top bun on the crushed tortilla chips and enjoy!
