Ingredients:
Cupcakes:
1 (5.87 ounce) Miss Jones Cake Mix*
3/4 cup firm tofu, packed
3/4 cup non-dairy milk
1/2 cup vegan butter
Assorted colored cupcake liners
Frosting & Optional Toppings
1 (.29 ounce) Tub Miss Jones Vegan Frosting**
Plastic comic figurines
Vegan gummy bears
Cocomel chocolate covered caramels
Red vine licorice
Vegan marshmallows
Sweetened shredded coconut
Mini non-dairy chocolate chips
Assorted sprinkles
Directions:
Preheat the oven to 350° Fahrenheit. Prepare liners for 18 regular cupcakes or 36-40 mini-cupcakes.
Place the tofu, non-dairy milk, and butter in the jar of a blender and blend it on high until smooth. Reduce the speed and gradually add-in the cake mix blending again until smooth, stop to scrape down the sides as needed.
Fill each cupcake liner just over half-way with the batter. Bake 14-18 minutes for full-sized cupcakes or 7-10 minutes for mini-cupcakes. Transfer the cupcakes to a wire rack to cool completely before frosting.
Use a pastry bag and large star decorator tip to apply the frosting to cooled cakes. Top them with comic figurines (find them at any Dollar Store toy isle) then serve them with the optional toppings and allow guests to create a DIY do-it-yourself decorated cupcake. Create a Comicon Cupcake decorating dessert buffet!
*Many ready made commercial frosting brands are also already vegan by default. Check the ingredients. Miss Jones frosting is vegan and organic!
