Chicken Bacon Chipotle Sandwich

Ingredients:
1 tablespoon mayonnaise, more for skillet
1 chipotle pepper in adobo sauce, diced
2 slices sourdough bread
2 slices Monterey Jack cheese
2 slices cheddar cheese
1/2 tomato, sliced
4 slices bacon, cooked
1/2 cup diced cooked chicken
Directions:
Heat a skillet to medium-low heat.
Combine the mayonnaise with the diced chipotle pepper. Stir well.
Use a spoon to spread the mayo mix on one side of each slice of bread.
Place two slices of Monterey Jack on top of the mayo mix on one slice of bread and the two slices of cheddar on the other.
Arrange half of the tomato slices, two slices of bacon and half of the chicken on top of the Monterey Jack, repeat process for cheddar side. Place the two halves together to create a sandwich.
Spread a thin layer of mayonnaise on the top of the bread that is facing up. Use a spatula to flip the sandwich over and place in the skillet. Toast for 3 minutes. While the sandwich is in the skillet, spread a thin layer on top of the bread. Flip and cook for an additional 3 minutes.
Remove the sandwich from the skillet and transfer to a plate. Cut in half and enjoy!
